It was made in New York City LONG ago by Forschner, a company that we today think is Swiss but which originated in the USA, where this piece was made. It bears their oldest RHF logo on its fine, rosewood handle, helping us date the piece to the late 1800's/early 1900's. It fully lives up to that legendary company's reputation for quality in knives but with a vintage twist, in having a carbon steel blade rather than stainless. It was made at a time when this maker emphasized quality and hand-forging, unlike today, when they are putting their chips on marketing prowess and mass production.
This incredibly well-preserved knife comes hand-forged with integral carbon steel blade/bolster/tang construction and old-growth rosewood handles triple-riveted onto its full tang, which is tapered toward both ends for maximum balance. If you've never used a carbon steel knife before, you're in for a true revelation of performance. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! We had this one professionally edged for this sale and it is now more razor keen than when it was new and you could literally shave with it.NOTHING is better for reducing a large pile of vegetables or other foods into MUCH smaller piles of aromatic goodness. This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like a weight you're simply holding.

Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
