Hand-forged in Solingen, Germany by Wusthof sometime in the 1950's-1960's, this exceptionally fine oriental chef's vegetable cleaver knife, is neither cleaver nor knife--yet both; how positively ZEN! Offered here with a fine and hand-forged carbon steel blade and a solid walnut handle over a full and hidden tang it's as scarce as hen's teeth. It has been used but is found here in very good condition with NO problems of any kind and in one key way BETTER than a new one because we've had it professionally edged for this sale and it's now RAZOR keen in a way that very few knives ever can be. Because of its age, the quality of the steel in its blade is superior to the overly-hardened stuff used today--recycled "World Market" steel processed in Germany but originating in Pakistan, China or India. Its construction and materials are as fine as anything made in the Western style, world-class in every way.The blade is perfectly balanced in heft and in length. When you hold the knife, you can feel the center of gravity in your hand, as ALL knives should (but don't). The blade is ground convexly on both sides to produce a marvelous taper, so you don't have to work to sharpen it. It's 8.25" x 3.25" blade (measures 12-3/8 overall) makes it very versatile--not too large, not too small-- for any number of chores in the kitchen and at 10.7 ounces its heft is virtually the same as a Wusthof chef knife. No matter how many knives you may already own, you're truly missing something great if you don't have a knife like this. I have no doubt you'll find yourself returning to it again and again. NOTHING makes quicker work dicing, slicing and chopping in your kitchen, and most Chinese kitchens use only this knife for cooking--amazing--and you'll soon see why. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly.
