We're often asked for finer vintage paring knives in carbon steel, primarily because they're the hardest ones to find in usable condition, but this one should exceed the requirements of even the most demanding chef.Hand-forged in Solingen, Germany by Wusthof, probably pre-WWI, it's just as good as it gets. Just look at it--a thing of beauty and truly a work of the cutler's art. It was made with a hand-forged carbon steel blade, reinforced at the bolster with a white brass "high-collar" ferrule (in the manner of the French Nogent-style knives) over a solid ebony handle, pierced through to the pommel with a full, rat-tail tang.
Condition is nothing short of amazing. Though its blade retains its original factory shine, it is carbon steel, not stainless, and is guaranteed to discolor normally with use, and to rust if not kept dry. Handle is fully intact, free of cracks or any problems whatsoever. It outshines and outclasses anything in the modern marketplace by a country mile. As you'd expect from this top German maker, it's built to outlive its owner and then some.
It's already outlived at least two, I suspect, and is probably going to outlive both of us, too. Even more than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, waferizing anything you'll put in its way. Measuring 9-5/8" in length with a deft 5-1/8" blade, it's most obvious applications would be peeling, paring and other utility work, and for any of your kitchen's most demanding precision work, it will truly excel.
Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination.This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it. You know how difficult it is to come by fine, smaller chef knives in carbon steel, since most knowing chefs won't part with theirs until they're dead of the knife is worn out.
