This knife predates the industry's widespread conversion to using recycled steel stock and was forged from virgin steel instead. No matter what you call it, it was made by Anton Wingen to be one of the finest, most effective master carving knives ever made. Wingen was one of the finest cutlery companies Solingen, Germany has ever known, and the knife was made in the 1960's and into the 1970's using a fully integral frame in which blade/bolster/tang/pommel were all hand-forged from a single billet of very fine stainless cutlery steel.Handles are a dense, black phenolic resin that is very hard to differentiate from real ebony. As you can see in the photographs it is nothing less than a masterpiece of the cutler's art. Wingen has always been best known in this country for their Black Forest cutlery, which was prized world-wide for its beautifully carved stag handles which depict pastoral deer, birds or other animals from Germany's legendary hunting grounds. This knife couldn't be further removed from those earthy, pastoral origins; instead, it is a metropolitan creature of the night, like Batman, revealing itself only to waferize whatever is unfortunate enough to come before it. Its tip, slanted like the Japanese tanto, is also sharp--an incredibly handy detail that makes it so much more effective in carving anything and everything.
It measures 17" long with an 11.25" blade--long enough for any slicing or carving duty you may call it for. Best of all, perhaps, is the fact that its edge has been given a RAZOR sharp treatment for the purpose of this sale and it is so sharp you can literally shave your face with it. In short, it will be a revelation in performance, even for many seasoned professional chefs. Without doubt, this is one of the finest slicing knives you'll ever use--lightweight, balanced, flexible and as beautiful to look at as it is to use.
