By any measure this is beautifully preserved English chef's knife was hand-forged and crafted in a timeless style that is uniquely British (though heavily influenced by the French). Any chef, large or small, would be thrilled to own or wield such a fine blade in even the most demanding kitchen. It was made by the George Butler Company in Sheffield, one of that legendary city's most celebrated makers.Butler was once one of Sheffield's finest makers of premium-quality cutlery for professional chefs and this knife was made at the height of the company's prowess. Its markings are crystal clear and indicate not only that it was made in 1943 but that it was made for the British military (as would just about anything manufactured at that time). The arrow logo you see in its blade stampings is the markings of the British equivalent of our Quartermaster's Corps. Stylistically, it is the embodiment of a British chef's knife.
In terms of its quality, materials and condition, it lacks for nothing. The fit and finish of its carbon steel blade and dark ebony handles is exquisite. The ebony is of the highest quality, deeply, darkly grained, and hafted over a tapered tang that extends the full length of the knife, tapering towards both ends for maximum balance. When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding.It's superb aesthetics are matched by it's performance. You will not find a sharper, more functional blade than those hand-forged from Sheffield steel. For this sale we've had it given an EXTREMELY sharp professional edge and it must be treated with extreme care or will land a careless user in the ER needing stitches. The blade still shines like stainless, though will definitely discolor over time and will rust if not kept dry with each use.
