Made in Maniago, Italy but never imported into this country, Pino knives were once one of Italy's premier makers of superb cutlery for the professional chef and butcher, and have always been highly prized by connoisseurs on both sides of the Atlantic Ocean. Knives of this form are rarely found here in the States by any maker, and that's truly a shame, because it's one of the most highly versatile knives I can think of, and for many chef's the only knife they'll ever need.
The real greatness of this knife, though, is in the comfort it enjoys in your hand and in the simply outstanding performance it gives in the kitchen. Its extra-wide blade endows the user with extra leverage and greater knuckle clearance, perfect for allowing your hand to achieve a complete cut to the bottom of whatever you're slicing with a single stroke. Imagine using it for chopping, dicing and mincing as your main chef knife, much like an oriental cleaver or Japanese nakkiri, only wider. Imagine using it to take a paper-thin slice from a whole prosciutto.
Want your pastry and pasta to be TRULY hand-made? NOTHING will make a cleaner and straighter cut. Its hand-forged carbon steel blade is wide and thin yet very strong and rigid--the very definition of superior forging in blade steel. Handles are of the very finest rosewood, hafted over a full and tapered tang using the old-fashioned birdseye rivets: as warm to the touch as it is easy on the eyes.
Condtion is outstanding with no problems of any kind, despite the fact this knife is well over 70 years old. Like all carbon steel knives, it must be kept dry, even during use, but this minor inconvenience is more than offset by the superb edge maintenance and performance offered by carbon steel, as any experienced chef or butcher over the age of 50 can confirm.It is RAZOR sharp now and could easily shave your arm. Please use the utmost in caution or you may find yourself in the E. Measures 14.75" long with a carbon steel blade that is 9.75" long and 2-3/8 wide, but by any measure this is a singularly beautiful piece of vintage cutlery that should become an heirloom for collector and user alike.
