It's ready to perform several lifetimes of outstanding service doing every kitchen's most demanding precision tasks, from butterflying prawns to boning quail to peeling and paring fruits and vegetables of every description.
This beautifully crafted knife was made by Sabatier in their fines "PROFESSIONAL" line, which is no longer made. It was made in Thiers, France with a forged carbon steel blade/bolster/tapered tang with handle made from black composite.Like all carbon steel knives, it will hold a razor's edge with relatively easy honing. Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care.
You can literally shave your face with it. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination. Like all carbon steel knives, it must be kept dry, even during use, but this minor inconvenience is more than offset by the superb edge maintenance and performance offered by carbon steel, as any experienced chef or butcher over the age of 50 can confirm.
