As anyone who has ever used one can tell you, this is, quite simply, one of the finest paring knives ever made. Made in what's known as the "Nogent style" for the city of the same name in France, the knife incorporated a style and construction that is nearly a lost art on this earth.

While the blade is entirely hand-forged with an integral bolster, as modern high-quality chef's knives are, the handle required far more craft to build. It involves a rat-tail shaped tang going the full length of the handle (piercing it, actually), anchored at the bottom with a hooked tang-pin and collared at the bolster for added support. What makes this variety of knife so special, however, is its balance in your hand and its relative light weight, which enables it to speed through your workday in the kitchen like a long-lost razor finger reappearing suddenly on your hand!

Many people MISTAKENLY believe that the modern style is better. This couldn't be further from the truth.

Ask your own local French chef over the age of 50. Handle is virtually indestructible black plastic and still shows its original stamping of the Four Stars and Elephant logo, along with the word Sabatier, evidencing its pedigree as having come from Sabatier's legendary Thiers-Issard works in Thiers, France, the most famous of all Sabatier brands. As such, with stamped rather than painted label on handle, it' probably dates to the 1950's or older. In the classic French style, it comes with a truly triangular blade, larger than the fabled tournier.

Julia Child has written extensively about her love of these knives and they are VERY rare to find in any condition. Though used, it comes undamaged and is RAZOR sharp--ready to show you a whole new world of precision in tackling the most detail-oriented tasks you have. I predict that the first-time user of this knife will become an instant convert.

As the photos show, it also has an very fine point, enabling you to enter places that German paring knives can only wonder about. Its blade is made of superb carbon steel, which hones razor's edge in a way stainless can only dream about, with relatively easy honing. Because the knife was made prior to 1987, when the company, like most major makers of fine cutlery, began in that year to switch to using recycled steel in its blades, it will not snap in mid-use (I've had several do it to me, including THREE by Henckels).

Best of all, it has been professionally edged for this sale and is now FAR sharper when new; a revelation of performance even for many of the most jaded chefs. It measures 8.25" overall (blade alone is 4") but performs HUGE in any kitchen.
