Knife handle is mahogany, full tang. 1095 carbon steel blade has been hand-burnished and buffed on a wheel, and will start to show a characteristic rainbow-colored patina upon use; this is normal. Minor pitting present in blade steel; knife is estimated at nearly a century old but handle is tight. Wood has been sanded, oiled with pure tung oil, and buffed several times. Knife edge has been professionally rebeveled and honed by myself to 21°/side, then finished on fine leather strop to hair-whittling sharpness (12k grit).
Blade is strong but very light for its length, with a slight flex, making it in my opinion very useful for fine minces as well as slicing. A very well-balanced, full sized German-style chef's knife. For those looking for a go-to workhorse in carbon steel, this guy might make a good soulmate knife for all main kitchen work. Unusually springy and light in the hand, it's a pleasure to use.
