In fact, it's probably enough cleaver for the vast majority of chefs, capable of processing most of the meat, fowl or fish most modern kitchens will ever need to. Without a doubt, this SUPEBLY preserved and heavy-duty, carbon steel meat cleaver is one of th finest of its kind made by any German maker.Most makers of this period (late 19th/early 20th Century) made non-descript pieces with the usual profile but F. Dick practically turned the humble cleaver into the work of cutler's art you see here. It has been used but is still in excellent condition, as the photos show. Handles are made of solid, premium grade walnut--a substantial upgrade unto itself from the usual beechwood. Handles are riveted onto a full and tapered tang, and capped at the bolster by a cupola-shaped iron ferrule. Dick cleavers from their competitors: Handle is hand-scored with a raised design at its edges, for beauty as well as for increased grip.
Blade is the real star here, stamped, No. It measures 13" long with a blade that's 5-7/8" by 5, humped at the tip to give greater OOMPH!Best of all, though, the blade was hand-forged, as evidenced by its tapered tang, which lends the piece a measure of quality that most American-born cleavers can only dream about. This cleaver has some true substance to it and will make quick work of any game, livestock or other meats that it may encounter. Whether you're someone who butchers their own livestock or game, a chef in need of some heft in his/her arsenal, or simply a collector looking for one of the finest cleavers ever produced, this is an excellent find, offered here in heirloom condition.
