One needs only to take a peek at its rich. Lustrous patina to recognize, however, that this cleaver is older than that, dating probably to the late 1800's/early 1900's. Its materials and construction are very consistent with older cleavers I've seen in Italy over the years, most of which were made not in any factory but by the local village blacksmith, or sometimes even by the user himself. Best of all, perhaps, is that it is found here in VERY sharp, ready-to-use condition.
We urge the utmost caution or a careless user may very well find himself in the E. It is a rare piece in terms of sheer beauty and utility but most striking about it is its somewhat mysterious and amorphous animal shape, as if its maker was suggesting some kind of great, unified animal spirit. It was common in Europe to make cleavers in the shape of animals, either of those to be butchers poultry, pigs, horses even! Or of those who preyed upon them (foxes, weasels, cats), as if invoking some pre-Christian gods of the eternal butcher's flame.
It makes pieces like this especially desirable for being half expertly produced cutlery and half folk-art. Hand-forged from some very fine carbon steel, this incredible piece is as useful today as it was when it was first forged and has EVERYTHING going for it one could hope. It's hand-forged blade was made with thick carbon steel that's expertly ground with a taper toward the cutting edge.
The handles of this piece are equally stunning, made of beautifully grained walnut with iron rivets. Blade is hand-forged and of the very highest quality, the likes of which is no longer available on the modern market.
Amazingly, there are NO cracks or other problems of any kind, and that's nothing short of miraculous. Measures 13.25" long, 6" long across the edge, and 3.25 wide and weighing in at a VERY hefty 35.4 ounces. In every respect a truly great, heirloom-quality find for chef or collector alike.
