Condition is excellent with a beautifully preserved carbon steel blade over virtually indestructible black composite handles, made at the height of the company's prowess. It was made by Thiers-Issard (their logo is the elephant with 4 stars, which is stamped on handle and etched on the blade) in the years following WWII and is equal to any the company ever produced. Like many other French knife makers, the company spiraled in decline for economic reasons and the quality of their cutlery suffered as a result, forcing them to compete more and more with the cheap, mass-produced goods of Japan, Hong-Kong, China and other nations. This knife, though, pre-dates all of those woes and is a model of beauty, functionality and craftsmanship. Like all fine knives, it has a fully forged and tapered tang that extends the full length of the knife, for maximum balance in the center of your hand, where it belongs.
When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding. It's superb aesthetics are matched by it's performance. This is the perfect knife for a wide variety of kitchen tasks, and is, for many old-school chefs, the only knife you'll ever need. From creating thin slices of turkey breast, tomato, cucumber, onion or whatever, to reducing large piles of your garden's freshest herbs into small piles of aromatic goodness, this outstanding knife will outperform just about any other.Notice that the knife incorporates the slightly elongated, rounded French bolster, which allows your fingertips to achieve maximum contact with the knife for better control than its German counterparts. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! It is RAZOR sharp now, having received a professional edging prior to listing, one sharp enough to surprise even many veteran chefs. Also nice is the size of the piece, measuring an extra-extra-large 15-7/8" long with 11" blade, able to tackle big jobs but agile enough to handle the occasional clove of garlic. This is an especially rare size, with FAR more of the 10" and 12" blades having been produced. For some very lucky person this is JUST the right knife.
