This superb vintage chef's knife was made in Southbridge, Massachusettes by Dexter and is one of the single rarest and most highly desirable knives ever made by this company--or ANY company, for that matter. Designated with Dexter model #45A10HHG--repeat, HHG, not merely HG. The designation stood for Half Hollow-Ground because the knife incorporates a design I've never before seen from any other maker and I've only seen ONE other Dexter knife like this--in my own permanent collection.

, in which the edge is hollow-ground along the front half of the blade--where you need it most--and regular, flat-ground along its heel, where extra heft is desirable. Where it is hollow-ground it's done so of the very finest quality, noticeably lighter and sharper than a standard Dexter carbon knife of the same size and vintage. Hollow-grinding is a labor-intensive process, creating a double-concave cutting geometry (akin to that found on a barber's straight razor), and it results in a frightfully sharp edge that's very easy to keep that way.

Not many makers are producing hollow-ground blades anymore, and those that do, employ high-tech machinery to do it at the edge only; this knife is hollow-ground deeply into the body of the blade. And NONE of those can produce the kind of quality you'll find in this knife. This knife predates all that and was the product of skilled men and women in the United States for whom pride and craftsmanship were the everyday norm, rather than the exception. It's made with a thinner, but VERY sturdy blade that allows it to be used for every task in the kitchen--FAST, for working with your most delicate herbs, garlic or anything else that comes its way all at warp speed. Like all Dexters of this vintage, it was made with a blade magnificently forged from the highest-quality carbon steel, and its handle was beautifully crafted from the finest old-growth rosewood--dark, dense and tight--selected for its tightness of grain, and fitted onto the fully forged integral blade/bolster/tang. The quality of its steel is readily apparent every time you steel it or thump it with a finger and you hear it ring like a bell.

This exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it. At the risk of sounding like a broken record, you have probably NEVER experienced this kind of sharpness before and when you use it, you'll understand just how sorely you've been missing this kind of performance up to now.

This is the ONE knife you'll want to take with you on a desert island (there are many chefs who use this style of knife for EVERY job in the kitchen). At this size (10" blade, 15-3/8" overall), the knife handles incredibly well and will serve equally well for virtually any chef, amateur or professional. Condition is excellent with no problems of any kind. This is a VERY special knife, indeed, and fully worthy of its premium price.
