We recently bought out a collection of vintage chef knives from an estate in Paris and THIS was, without a doubt, one of its most plum picks. Made in Thiers, France by Sabatier under their Jeune line of knives, their iconic logo of a cluster of grapes and the letter K under a crown has been the imprimatur of quality for well over 100 years, though I'd estimate this knife as having been made in the late 1970's or early'80's. Despite that, it has NEVER been used and is offered here in brand new condition, a stunning example of the cutler's art that is sure to leave any user or collector alike a bit breathless for a moment or two.Just look at it--a thing of beauty. It is a gigantic knife, to say the least, but it is a graceful and gentle giant, NOT one of the massive "cuisine massif" or "chef de chef" knives that are more commonly found from French makers. The knife is 19-5/8" long overall with a hand-forged stainless steel 14.25" blade that is 3.25 wide at the hilt but weighing in at just 18.2 ounces, it is maneuverable and fast in a skilled hand like VERY few others--much more like those knives made by some American makers in that respect (Landers Frary & Clark, Deerfield, Lamson, to name a few). Handle is virtually indestructible black polymer with a slightly unusual safety grip for a French chef knife--much more like those found on traditional French butcher knives. The quality of the steel is superior and the blade rings out like a bell when you thump it with a finger--a sign of excellent tempering.
It also pre-dates the industry's conversion to using recycled steel and made instead of fine virgin steel. If you've been wondering what one of the rarer vintage Sabatier chef knives might look like, you've just gotten a glimpse.
This superb quality chef knife is an exceptional find by any standard, coming here in one of the largest and hardest to find sizes, truly capable of adding some dazzle to the arsenal of any chef and rightly taking its place as the centerpiece of most cutlery collections. An heirloom-quality piece in heirloom condition and the kind of knife that user and collector alike will be proud to pass down to future generations.
