Its blade may shine like stainless steel but it is, in fact, hand-forged from some of the finest carbon steel ever produced for use in the kitchen.
As with all carbon steel knives it will rust if not kep dry and will continue to discolor normally with use but this minor inconvenience is more than offset by the superior performance enjoyed by users, as any seasoned chef can readily confirm for you. Made in Solingen, Germany by Friedrich Herder and Sons, it's full of the kind of expensive, labor-intensive detail that ultimately contributed to the demise of this once-dominant maker of fine cutlery of every description (they've actually been reborn, but their products no longer shine as they once did). By machine, this knife enjoys a fully hand-forged blade made from superior virgin steel. As such, it is quite superior to that made today by any but the most demanding custom cutlers.The handle is clad with thick scales of sambar stag, somewhat coke-bottle shaped, with solid brass bolsters. As such, it is FAR more comfortable in the hand and allows a comfort and control that eludes most knives.
Especially telling is that it has a full and fatted tang for maximum balance, and a measure of fit and finish more akin to that of a hand-built Rolls Royce than a robotically assembled Lexus, if you know what I mean. The center of its gravity sits squarely in the center of your palm, as it should, giving the user maximum control.
You will not soon forget the feel of such a knife, once held. A collector's piece though it may be, it would be an utter shame not to use it daily.It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing. Also unusual about it is the relatively French profile of the blade--more truly triangular than most German chef knife blades. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Measures 12.75" with 8-3/8" blade but the real measure of such a knife is in its abundant details.
It's ready to serve a useful lifetime of dicing, chopping, slicing and generally making fast work of whatever you put in its way, should you choose to use it, but if you just want to display it among your collection's finest, we won't tell!
