Unlike most German knives of its kind it enjoys a substantial measure of quality and detail that is rare outside the custom-made market. Alternately known as a cimeter, a scimitar or simply as a curved butcher knife, it was made in Solingen, Germany by Friedrich Herder and Sons and is full of the kind of expensive, labor-intensive detail that ultimately contributed to the demise of this once-dominant maker of fine cutlery of every description. The company has been reborn but their wares no longer reign supreme as they once did--like this. Unlike today's mass-produced, hot-drop forged blades i.

By machine, this knife enjoys a fully hand-forged blade made from superior virgin steel. As such, it is quite superior to that made today by any but the most demanding custom cutlers. I estimate the age of the piece to be between the world wars, as evidenced by its outstanding, and singularly most impressive design detail, the inlaid spade logo center rivet. The company used this logo for well over a century (it's repeated in the stamping on the blade), but only on their best knives. Like all superb knives of this vintage, it has a tapered tang for greater balance, and a measure of fit and finish more akin to that of a hand-built Rolls Royce than a robotically assembled Lexus, if you know what I mean.

Condition is nothing less than astonishing. Despite being well over 75 years old it has NEVER been used and apart from some very minor shadowing on its carbon steel blade from decades in storage, it has NEVER been used and is as fresh as the day it first left the factory. It's the only one we have to offer and it will be a VERY long time before either of us seen another quite like it. A collector's piece though it may be, it would be an utter shame not to use it daily if you're someone who cuts meat on a regular basis. It's blade is made of beautiful, hand-forged carbon steel, and if you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Handle is a single chunk of fine ebony with an inlaid brass spade, as warm to the touch as it is easy on the eyes. This style is ideal for cutting and trimming meats, but most chefs find no end of uses for them. The safety-style handle will help nicely in keeping your fingers where they belong--on your hand. You might not be aware that cutlery companies like Herder began to use recycled steel stock in 1987, but this knife was made WELL prior to that from virgin steel.

Whether you are a professional or amateur chef, you'll instantly come to love this magnificent vintage knife as one of your very favorites. Measures 15-5/8" with a 10.25" blade--but it's razor edge and balance make it an excellent find by any measure and an instant heirloom for user and collector alike.
