It enjoys the beauty and purely French design that we usually associate with the finest old Sabatier chef knives made in France, and it was once common for Italian makers to reproduce those styles. It's an ideally-sized knife with a rare 9" blade (13.75" long overall) made with just the right amount of heft.
It comes to us as part of a much larger collection of VERY fine Italian chef's cutlery pieces, several others of which are already posted, though there are a few more yet to come. Check back with us as we continue to post them periodically in the coming weeks and months because not all of them will be posted at all times.Some are rustic pieces, made by their original owners, and some, like this one, are new/vintage pieces that would become the showpieces of many serious collections. Like their collector counterparts, any professional chef would be DELIGHTED to own and use such a fine, professional grade piece of cutlery.
It was made with beautifully grained genuine mahogany rosewood handle scales fixed onto the tapered tang of its entirely hand-forged blade, using hand-forged brass and steel birdseye rivets. Though its blade is shiny like stainless, its blade is carbon (non-stainless) steel, and it WILL rust if not properly maintained. This minor inconvenience is more than offset by the superior performance of carbon steel, as any chef over the age of 50 can tell you. Most desirable about this piece, in our opinion, is its double-convex, radius-ground edge, which can attain the sharpest possible cutting geometry when finished.
Surprising to many younger buyers will be the fact that the edge was not at all sharp when we obtained this knife, though it is razor sharp now, haivng been expertly edged for this sale. In the old days many professional chefs preferred to receive their knives unfinished in order to apply their own edge, and they did not consider a knife fit for use until they had a chance to do so. We urge the utmost in caution, however, or a careless mistake will send one to the E.
Like all of the finest knives in the world, it's full of the details which announce that the knife was made with only one objective--to be the finest possible. It's as fine a knife to hold and feel as it is to use, the Italian equivalent of a fine vintage Sabatier.
For usage, there's NONE finer, or simply makes a VERY fine addition to any collection and something you'll rightly come to think of as an heirloom.
