Please read our Terms below for details. This is truly an impressive knife the likes of which simply don't exist outside the vintage market. Large, wide and perfectly balanced, it's just as good as it gets, performing every bit as well as it looks and it looks STUNNING. It was produced in Maniago--Italy's cutlery-making capital--by Pino, a company that never imported their wares into this country but which enjoys a SUPERB reputation in Italy itself. Made in the traditional French chef's profile, it's constructed with handles made of the very finest lignum vitae, hafted over a full and tapered tang using the old-fashioned steel-inside-of-brass birdseye rivets: as warm to the touch as it is easy on the eyes--entirely free of cracks, chips, separation or looseness.Blade is approximately 1/8 thick near the hilt, tapering towards tip and pommel--beautifully demonstrating its hefty, hand-forged origin in the process. Blade is a full 2.75" wide giving you excellent knuckle clearance, which is always handy when chopping at warp speed; it's 16" overall with 11.25 blade.
This knife enjoys an unusually fine feel and balance and you'll have to use it only once to appreciate the advantages offered by the craftsmanship and skill of yesterday over the robotic uniformity of mass-production today. This is EVERY chef's most trusted tool in the kitchen and when it comes to your knives there is simply no room for mediocrity if you are a pro or serious amateur. Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care. The thinking was that a chef would want to edge his own knife and as unfinished goods, it was taxed at a lower rate upon importation. We've cleared that hurdle for you, however, and now you be sure it will thrill even the most jaded user, but please exercise MAXIMUM caution, since a careless user may find himself in the E. This knife comes to us as part of a collection of VERY fine Italian chef's cutlery pieces that we're only beginning to offer.
Some, like this one, are new/vintage pieces that easily could become the showpieces of most serious cutlery collections. Though its blade is shiny like stainless, its blade is carbon (non-stainless) steel, and it WILL rust if not properly maintained. This minor inconvenience is more than offset by the superior performance of carbon steel, as any chef over the age of 50 can tell you. Like all of the finest knives in the world, it's full of the details which fully demonstrate the beauty of real craftsmanship in cutlery. It's as fine a knife to hold and feel as it is to use; not merely the Italian equivalent of a fine vintage Sabatier but a sleek, predatory beast entirely of its own DNA. I can't recommend this knife highly enough and whether you're looking for an incredible knife to use, something to center your collection of fine cutlery, or merely shopping for the impossible-to-please chef on your gift list, THIS is truly a knife to get excited about.
