Despite being well over 35 years old this superb vintage Sabatier knife is found here brand new, never used, in a somewhat rare configuration, made without the extended, slightly cylindrical bolster we normally associate with French knives--more in the shape of what is normally found in knives made in Germany or America. It was made in Thiers, France, from Sabatier's retired upscale "Professional" line of cutlery, one of the finest to bear that legendary name, and comes from the very end of the "Professional" Sabatier's run, as evidenced by the HOAN name on this knife's blade.
Houswares Of All Nations (HOAN) was the final distributor in America of these fine knives, but they still pre-date the 1987 conversion to recycled steel that revolutionized (for the worse) the cutlery industry in Europe. As the photos show, it's remarkably well-preserved, and whether you intend to put it into a collection or into use in a busy kitchen, you'll find none finer. The German-style bolster does have a function, permitting greater control with the wrist and permits better performance for many users in small quarters--nice in a cramped kitchen, or when working a line. This is a truly outstanding knife in a highly desirable larger size in this configuration. Measuring 14-3/8" long with a 9.75" blade--the perfect knife for carving or slicing just about anything that presents itself in the busy kitchen of amateur or professional alike.
It's getting harder all the time to find Sabatier knives of this vintage anymore, though you'll certainly want to, since the blade is forged from pure virgin steel (as was the norm prior to 1987) rather than from recycled steel stock, as is the practice today. Whatever name you decide to call it, this is one of every skilled chef's most essential knives in the kitchen. If you've never used a carbon steel knife before, you're in for a treat.Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. A great knife that user and collector alike will soon come to regard as an heirloom. And it's never too early to find a truly unique gift for that hard-to-shop-for chef on your list! I can tell you that this is HOGWASH, started in the mid-1990's by Lee Valley Tools, who had a bunch of them to sell and needed to call them SOMETHING. Since then it's been copied by more than one distributor of them, then parroted by the growing legion of clueless ralph1396-wannabee's out there, in an attempt to sound like they know what they're talking about, and invariably proving that they don't. I know this from over 60 years of avidly collecting not only the knives but also their catalogs and sales ephemera and anything and everything else related to them, at a time when most knife collectors thought I was crazy.
The notion that this knife is "Canadian, " HA! Afraid to sell them WITHOUT a special name or designation, the company rather unimaginatively called them Canadian (Because LVT is a Canadian company with most of their customers in the USA) and/or American, but that was purely marketing hooey and nothing more, picked up and mimicked mindlessly by those who think the ability to use Google makes them an authority on a given subject.
