This is just an AMAZING find and whether you're a chef in need of one of the very finest paring knives ever made or just collecitng fine vintage cutlery, THIS is the knife that can up your game by a couple of notches. Made in what's known as the "Nogent style" for the city of the same name in France, this is, quite simply, one of the finest paring knives ever made on this planet, as anyone who has ever used one can tell you. It comes from Sabatier's finest Thiers-Issard line of cutlery (4 stars and elephant logo), and its blade measures 4.5" (the knife is 8.5" long overall) with an incredibly rare and beautiful walnut handle, bolstered in white brass in the Nogent style. The knife has never been used and is found here in virginal condition, incorporating a style and construction that is now nearly a lost art in cutlery.

While the blade is entirely hand-forged with an integral bolster, as modern high-quality chef's knives are, hafting the blade to the handle required far more craft to build. It involves a rat-tail shaped tang going the full length of the handle, and collared at the bolster for added support.

What makes this variety of knife so special, however, is its balance in your hand and its relative light weight, which enables it to speed through your workday in the kitchen like a long-lost sixth finger reappearing suddenly on your hand! Many people MISTAKENLY believe that the modern style is better. This couldn't be further from the truth. Ask your own local French chef over the age of 50. Also, it was made in the classic French style with a VERY pointy and truly triangular blade, all in a rare and welcome larger size.

James Beard and Julia Child have written extensively about their love of these knives and they are VERY hard to find in any condition but in like-new shape like this? I predict that the first-time user of this knife will be an instant convert. As the photos show, it also has a very fine point, enabling you to enter places that German paring knives must only wonder about. Its blade is made of superb carbon steel, which hones to a razor's edge in a way stainless never seems to achieve, with relatively easy honing. The knife was made in the 1970's with a blade that was forged pre-WWII--and LONG prior to 1987, when the company, like most major European makers of fine cutlery, began in that year to switch to using recycled steel in its blades. As such, it will not snap in mid-use (I've had several do it to me, including THREE by Henckels). A great opportunity for yourself or a lucky loved one's kitchen knives to take a giant step toward the sublime!
