It's rare to be found in any condition but comes here as new/old store stock acquired from a now-defunct cutlery distributor, NEVER USED and brand new in its original cardboard scabbard. It even still has its factory protective layer of coating that has kept ambient moisture from discoloring its carbon steel blade even today, more than 40 years after it was first forged. Because of this coating the photos have some shadows but knife does not. If you've never used an older Sabatier knife before, you're in for a treat; this one was hand-forged from the finest carbon steel, which must be kept dry, even during use, in order to prevent rusting but this minor inconvenience is more than offset by the superior performance and ease of edge maintenance delivered by carbon steel, as any veteran user can confirm. More importantly, it's made from virgin steel rather than from recycled steel stock, a vastly superior source for cutlery. You might not be aware that Sabatier, Wusthof and Henckels (along with just about every other European maker) began to use recycled steel stock in 1987, but this knife was made prior to that (The distributor it comes from went bust in the late 1960's). The difference is real-I've had several contemporary Sabatier and Wusthof knives SNAP in mid-use, but I've NEVER had a vintage one do it, and as a serious collector of vintage kitchen knives, I use the vintage ones in my own kitchen FAR more often. A very slight amount of contaminant in recycled steel can be made quite evident under the stress of even normal usage.

It simply outperforms in almost every way. Despite its size and heft, it NEVER feels heavy in your hand, due its superior balance and design.

Like all fine knives, this chef's knife has a fully hand-forged blade and tapered tang that extends the full length of the knife, feathered towards the butt for maximum balance at the center of your hand, where it belongs. It also has a more truly triangular blade, unlike the curvy German knives, requiring motion that originates in the forearm. Motion on curved blades originates in the wrist, and any experienced chef can tell you that also means fatigue if not outright carpal tunnel syndrome. When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding.

It's superb beauty is matched only by it's performance. You will not find a sharper, more functional knife than the older Sabatiers. Sabatier still makes knives, but in some disgrace. There are now several different companies licensed to make them, mostly nowadays in third world countries like China. The quality (to keep costs low) is often no better than what you'd find on the shelf at your local supermarket.
