It was made by Gustav Emil Ern in Solingen, Germany, and is as well-made a knife as you'll find, RAZOR sharp and ready to perform.You might not be familiar with Ern knives and other products, but their knives and other chef's tools have been well-known and respected by chefs and butchers the world over, especially in Europe, and their quality is easily on par with comparable makers like F. Dick, Henckels and Wusthof, and in some ways better. They're also a company that is, sadly, no longer among the living, as of just a few years ago the name has been licensed to another maker but the old pride of quality is long gone and all their wares are stainless. You'll have a hard time finding a more useful knife than this in any serious kitchen, amateur or professional. It was made circa late 1940's-50's, hand-forged by master craftsmen with a whopping 13" blade that is extra wide (just a shade under 3" at base of blade) and extra heavy more than. 25 thick at base, weighing in at 16.25 ounces--just over one POUND. It's also RAZOR SHARP, having been professionally edged for the purpose of this sale and even many veteran users will find it capable of things hitherto believed to be possible only in the dreams of the most imaginative chef.
