We found in an estate, this great v. Rofessional grade "Sabatier" or German chef knife. The high carbon content lets it hold an edge like no other. The blade is in exceptional condition and seems razor sharp. Marked on blade Gustav Emil Ern Solingen Germany with Butcher Block symbol.
The blade is a bit pitted in places, but this adds to its charm - See Photos. Wood handle is dull and could use some stain, but it is solid and in great condition, but with a 3/4 inch split as shown in the photos (the handle is still tight and right). This is a wonderful old high quality knife. Blade measures aprx (tip to hilt) 12 5/8 (11/16) inches long and overall length 17 7/8. Width of the blade (at base) is 2 ¼.Thickness of the blade (at base) is 3/16 inches and tapers to the point. Handle is wood, 3 brass rivets, and tight.
