Louis by the John Primble company, it bears their "Goods of Honor" shield and is a fine piece truly deserving of so lofty a boast. It dates to the period sometime after the 1870's when this pattern was first produced and before the 1910's, when this pattern was discontinued. It's a simply gorgeous pattern, too, with inlaid pewter crosses at its bolster with the finest rosewood handle scales over a full and fatted tang. Just look at it--a thing of beauty.
This is not a reproduction but an original piece found here in excellent condition. Its slightly flexible, hand-forged carbon steel blade is superior to virtually anything available today; hand-forging is entirely gone from the modern market.
Measures 8" long with a 3-7/8" blade. As you can see in the photos, it's a superbly crafted piece on par with the best ever made by that most legendary of cutlery-makers.Even more impressive than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, capable of peeling potatoes, butterflying shrimp and generally making VERY fast work of anything else you'll put in its way. You can literally shave with its edge. Large enough for small slicing duty, but deft enough to be used for peeling, paring and other utility work, it's a knife made to please small and large hands alike in the pursuit of culinary perfection. You know how difficult it is to come by fine, smaller chef knives in carbon steel, since most knowing chefs won't part with theirs until they're dead of the knife is worn out.
