In any case, this superb knife was made by Russell in their legendary Green River Works in Massachusetts and we FULLY warrantee that. It's found here measuring a whopping 18" long with a 12.5" blade. It's incredibly well preserved and ready to work at the highest level in even the most demanding kitchen, straight out of the box. We've also had it professionally sharpened for this sale by the good folks at Ross Cutlery in downtown Los Angeles--the best in the business--and as such it's now far sharper than when it was new. Knives of this construction were rare in the United States, since the expense could only be afforded by families of baronial wealth who were much more ready to pay top dollar for a French or English knife, the common wisdom among the rich of the time being that if anything was made in Europe it MUST be better.THEY COULDN'T HAVE BEEN MORE WRONG! This knife is at LEAST on par with the finest being produced at that time by anyone in France or England. American steel used by Russell at the time was mostly from Pennsylvania and the upper Midwest, and of exceptional quality. This blade will sing when thumped with a finger, a sure sign of quality (though not necessarily the ultimate test, since many superb knives do not sing, because of the way they're built). While the steel was uniquely American, the knife is crafted in a timelessly French style, especially in the birdshead flare at the base of the handle.
This knife is a model of beauty, functionality and craftsmanship, rare to be found in usable condition, especially considering that the knife was probably used on a daily basis in some huge country estate's private kitchen or in one of the fine haute cuisine eateries of a large city like New York, Philadelphia or Boston. Like only the finest kitchen knives, the knife has an integral blade/bolster/tang construction, with the tang piercing the handle in what's known today as a Nogent-style handle, named for the French city where it was pioneered.
This tang is somewhat rat-tail shaped and is anchored at the base of handle where you can see it come to its natural conclusion. When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding. It's superb aesthetics are matched by it's performance. You will not find a sharper, more functional blade than those hand-forged from this period in America's industrial glory.
Though this knife has obvious collector value, it would be a sin NOT to use it regularly. This is the perfect knife for a wide variety of kitchen tasks, and is, for many old-school chefs, the only knife you'll ever need.
