As anyone who has ever used one can tell you, this is, quite simply, one of the finest paring knives ever made on this earth. The fact that it is found here in such nice condition is almost unbelievable.Made in what's known as the "Nogent style" for the city of the same name in France, the knife incorporated a style and construction that is nearly a lost art on this earth. While the blade is entirely hand-forged with an integral bolster, as modern high-quality chef's knives are, the handle required far more craft to build. What makes this variety of knife so special, however, is its balance in your hand and its relative light weight, which enables it to speed through your workday in the kitchen like a long-lost finger reappearing suddenly on your hand! Many people MISTAKENLY believe that the modern style is better. This couldn't be further from the truth.
Ask your own local French chef over the age of 50. What makes this particular knife so great, besides that, is the fact that it was made in the classic French "tournier" style with a smallish, truly triangular blade.
As you can imagine, the fact that it has its own special name (like the "cuisine massive" and the "trenchelard") is indicative of how prominently it stands in the culinary esteem of most French chefs. Julia Child has written extensively about her love of these knives and they are VERY rare to find in any condition. This one comes in pristine condition and is factory sharp and ready to show you a whole new world of precision in tackling the most detail-oriented tasks you have. I predict that the first-time user of this knife will be an instant convert. As the photos show, it also has an very fine point, enabling you to enter places that German paring knives can only wonder about.Its blade is made of superb carbon steel, which hones razor's edge in a way stainless can only dream about, with relatively easy honing. The knife was made prior to 1987 (it's been in storage since the 1970s), when the company, like most major makers of fine cutlery, began in that year to switch to using recycled steel in its blades. As such, it will not snap in mid-use (I've had several do it to me, including THREE by Henckels). It comes from Sabatier's finest Thiers-Issard line of cutlery (4 stars and elephant logo), and is unlike anything being produced today by the company. Its blade measures 2.25" and it's 6-3/8" overall with virtually indestructible composite handles, bolstered in white brass. A great opportunity for yourself or a lucky loved one's kitchen knives to take a giant step toward the sublime!
