As you can see in the photos, it's used but still in excellent condition, with no problems of any kind, found here complete with its original blade cover, sharp and ready to work right out of the box. The Canadian-style bolster does have a function, permitting greater control with the wrist and permits better performance for many users in small quarters--nice in a cramped kitchen, or when working a line or for use by a maitre'd when carving at tableside. Easier to hone to a razor's edge and easier still to keep it that way, carbon blades require the user to keep them dry to prevent rusting, but this minor inconvenience is more than offset by the superior performance provided.
Knowledgable chefs and butchers alike have always preferred carbon to stainless blades, and once you've used one, you'll soon know why. Best of all, this knife was made sometime in the 1950's--1960's, predating by many years the industry's wide conversion in 1987 from the use of virgin steel in the making of fine knife blades to the use of recycled steel instead. The difference in quality and ease of maintenance is substantial, the performance is outstanding. Like all fine knives, this slicer has a fully forged tang that extends the full length of the knife, tapering towards both ends for maximum balance. When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding.
It's superb aesthetics are matched by it's performance. It's the perfect knife for creating paper-thin slices of turkey breast, tomato, cucumber, onion or whatever, and is made to be flexible as well as strong.
