Vintage, Sabatier Type <<32 DUMAS AINÉ>> Chef's Knife - 9.6 (245 mm). Chef's Knife - 9.6 (245 mm).The metal part of the handle tapers to the end. The wood is palisander (a sort of rosewood like ebony is). On a second thought it may be mahogany (another sort of rosewood) because I think that the palisander it does not have such a smooth surface. The palisander has some little dashes on the surface. The edges from the zone of gripping on the metal were flattened and polished in order to have a comfortable grip while working. Stiff blade, reliable, sturdy yet elegant. The blade and the handle - finely polished. Thiers is the place where as far as I know all the Sabatier cutleries are located maybe not for Sabatier St. Thiers is as Shefield is for England or Solingen for Germany. France has also many other cutlery centers as Paris or Nogent. Sabatier it is not a brand. Sabatier is like "Smith" in English. It is a very common name in that town of France. It happened to be included in some names of the cutleries. But there are a lot of others in Thiers at the same level for example: DUMAS; MASSOPTIER-ISSARD; ASTIER - PRODON; BARNERIAS Frères; COTTE; BATISSE etc. You can see here some. Every body know what a Sabatier means. AT THE POST OFFICE YOU GOTTA PRODUCE AN I. IN ORDER TO GET YOUR KNIFE (PARCEL/ENVELOPE) AND TO SIGN FOR IT.
