Yet it's large enough to fill the hand, making the knife easy to control and comfortable to grip. It tips my kitchen scale at exactly one ounce. The blade is 2 3/8 inches long and very thin. It has never been used nor sharpened.This small paring style is called a "detail" or "mincing" knife and is intended for fine work such as carving decorative shapes, deveining shrimp, mincing garlic very finely, or pitting small fruit. The blade's triangular shape never caught on with German or Japanese makers, but it's a smart design which naturally slices as the edge is advanced. That's a pity because the unique sharpening properties of carbon steel make it ideal for small details. It's a rare knife to find even in used condition--I doubt there are many new ones from this era left anywhere. There is no rust, but there are a couple of small spots of tarnish from long-term storage.
These could be easily removed with steel wool or fine sandpaper, but I have left the knife in its original condition. As it gets used, it will develop a pleasant, protective gray patina. Carbon steel requires simple but prompt care after use; it must be washed and dried immediately to avoid rust. And please, never put it in a dishwasher! Your reward for such trouble, though, is an edge that can be made sharper and kept sharp more easily than any stainless blade.
The knife measures 6 3/4 inches overall and will arrive in its original cardboard sleeve, also in pristine condition. The blade markings and handle stamp are near perfect. Both blade and carbon sleeve are also marked with the name of the importing company, ROWOCO. The photos are of the actual knife you will receive.
