This beautifully patinated vintage chef knife is stamped, "GONON-GIRONDE, ACIER FORGE, MADE IN FRANCE, " and probably dates to the years immediately following WWII. Vintage Gonon-Gironde knives are among the finest and most beautiful of their kind ever made anywhere, offered here in superb condition with a full carbon steel blade and a beautiful old-growth rosewood handle triple-brass riveted over a full and tapered tang.

As you can see, it represents the epitome of the cutler's art. Its maker, like most of the smaller family-owned and operated cutlery manufacturers of France, has struggled for years to stay alive and no longer distributes their fine products in the United States. If you've only used stainless steel knives until now, you will find a refreshing experience of oustanding performance in using a fine vintage carbon steel blade such as this. Easier to hone to a razor's edge and easier still to keep it that way, carbon blades require the user to keep them dry to prevent rusting, but this minor inconvenience is more than offset by the superior performance provided.

Knowledgable chefs and butchers alike have always preferred carbon to stainless blades, and once you've used one, you'll soon know why. Best of all, this knife predates by many years the industry's wide conversion in 1987 from the use of virgin steel in the making of fine knife blades to the use of recycled steel instead.

The difference in quality and ease of maintenance is substantial. Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory.

Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it. In this size, it's the quintessential French chef's knife, measuring 14.75" long with a 10" blade, and is perfect for chopping, dicing and mincing foods of every description for inclusion in your favorite recipes. The most outstanding quality of the knife is, though, the comfort and balance it enjoys in your hand. Like all superior cutlery, it feels more like an extension of your hand than like an object to be held. It is truly a joy to use.
