This is a top-quality American chef knife offered in the quintessential French chef knife size with a great deal to offer in the way of balance, precision and performance. The "LAMSON & GOODNOW" logo shaped like the continental USA is stamped into the blade and is clearly legible, as you can see, which is nice because most of the knives of this vintage (1940's-70's) have had their markings long ago wiped away from use and scrubbing. It was made many years ago in Shelbourne Falls, Massachusetts, by this proud American maker, America's oldest. Constructed in the classic French chef's configuration, you're looking at one of the finest pieces of professionally cutlery ever produced in the USA.
It was hand-forged from fine, virgin cutlery steel at a time when such attention to quality was the norm rather than the exception, and it has everything going for it one could hope to have in a chef's knife. In addition to the superb quality of its carbon steel, it was hafted with exceptionally fine, darkly patinated, old-growth beechwood handles, triple-riveted over a full and finely tapered tang. It packs a 10.5" blade (knife is 16" overall). In my esteem, however, the knife's single most desirable quality is the lightness, balance and speed that it enjoys in the hand, despite its rather large footprint.
This is NOT a cuisine massive, one of those very heavy duty knives that are more common in this length. It is, instead, a graceful giant, capable of turning your inner cooking demon loose in the kitchen, to the utter horror of onions, celery or anything else you need to chop fast and furious. Best of all, though, is the knife's condition, which is very good with no problems of any kind, as you can see in the photos. Though its blade may shine like stainless, it is, in fact, carbon steel and must be kept dry during use.
If you've never used carbon steel knives before, you're in for a treat. Only a true carbon steel blade can consistently attain the razor-sharp edge that makes using it a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance!
